Mini Cherry Cheesecakes

Ingredients

  • Crust:
  • 1/2 cup butter
  • 1 1/4 cup graham crackers
  • 1/4 sugar
  • Cheesecake:
  • 2 large eggs
  • 2 packages (8 oz) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 can cherry pie filling

Instructions

  1. Use a food processor to make your graham cracker crumbs, add 1/4 cups sugar and blend. Mix sugar/graham cracker crumbs with 1/2 cup melted butter and mix with a fork. Fill mini paper lined cups (in a mini muffin pan) with ~2 tsp. of crust and press to the bottom to form crusts. Set aside.
  2. Beat 1 cup sugar, eggs, cream cheese and vanilla until well blended. Fill each cup 2/3 full with cream cheese filling.
  3. Bake at 350 degrees for about 17-20 minutes. Cool on a cooling rack and store in an airtight container in the fridge.
  4. Before serving (cold), add a cherry with filling to each cheesecake.
