Make this Chocolate Torte with Five Simple Ingredients

In a word: YUM. On our last date night, which was LAST MARCH, by the way, we had the most delicious chocolate torte at one of our favorite local restaurants. I have been craving it ever since, and this five-ingredient chocolate torte comes pretty close. Of course, I had to make this one myself and no one brought it over to the table to me. Ha!

If no one is serving you kitchen to table torte, let me share the recipe I adapted with you. It’s decadent and surprisingly simple.

First, butter or lightly grease a 6″ springform pan and preheat the oven to 350 degrees.

Next, weigh 8oz of bittersweet chocolate.

Add chocolate and small pieces of butter in a bowl over a saucepan (or use a double boiler) of simmering water and stir until melted and combined. Remove the bowl from the saucepan and let cool slightly.

Combine the eggs, sugar and salt in a large bowl. Beat with a mixer on medium-high speed until pale yellow in color and thick, about 8 minutes.

Next, fold half of the melted chocolate mixture into the egg mixture until just combined, then fold in the rest.

Pour the batter into the prepared pan.

Bake until the top doesn’t jiggle and a toothpick inserted into the center comes out clean, 35 to 40 minutes. Transfer to a rack and let cool completely in the pan.

So, here’s a warning. Don’t be alarmed when the middle falls in a bit– because it will and it’s supposed to. The torte came out of the oven looking gorgeous like the photo above. Then, I took a work call, came out of my office and my torte had fallen in the middle.

I felt so deflated (LOL). But then I read that’s supposed to happen with a torte.

Serve with powdered sugar, cocoa powder, chocolate ganache, or try this homemade whipped cream. I refrigerated mine overnight and it was amazing the next day. You can also serve it warm, and I hear it’s almost like a pudding. We’ll try it that way next time.

  • 1 stick of butter, cut into small pieces
  • 8 ounces of bittersweet chocolate
  • 4 large eggs
  • 1/3 cup sugar
  • Pinch of salt
  • Powdered sugar or chocolate ganache

  4. Combine the eggs, sugar and salt in a large bowl. Beat with a mixer on medium-high speed until light in color and thick, about 8 minutes.
  5. Fold half of the melted chocolate mixture into the egg mixture until just combined, then fold in the rest.
  6. Pour the batter into the prepared pan and bake until the top doesn’t jiggle and a toothpick inserted into the center comes out clean, 35 to 40 minutes. Transfer to a rack and let cool completely in the pan.
  7. Remove the springform ring and transfer to a platter.
  8. Dust with powdered sugar.

These fresh-faced jack-o-lantern luminaries were made using recycled jars and wine bottles and a few supplies I had on hand. I added a few real pumpkins in different sizes from Trader Joe’s– I think these striped cuties were just over $1 each. Aren’t they pretty? My back porch is ready for fall. Just add a piece of a stick for the stem and some decorative Spanish moss on top. Also cute placed in a dough bowl or on your mantel. Easy, peasy, pumpkin squeezy!
